The research fellow will be responsible for the chemoenzymatic synthesis of food additives with antimicrobial activity and for the synthesis of glucosides for use as flavor enhancers. In particular, the following activities will be carried out: i) optimization of the fermentative production process of phenyllactic acid, ii) synthesis of the glucoside morelid, iii) isolation of flavonoids and terpenoids with antimicrobial activity from plant sources, iv) chemoenzymatic synthesis of the most promising flavonoids and terpenoids
