The research aims to enhance the sustainability and resilience of the olive and olive oil supply chain by improving its adaptation to climate change, economic competitiveness, and the quality of extra virgin olive oil. Innovative bioactive compounds will be evaluated to mitigate the effects of abiotic stresses on olive trees. To improve soil fertility, enhance carbon sequestration, increase productivity, and reduce the use of chemical inputs, the recovery and use of olive industry byproducts as soil amendments will be optimized. These by-products will also be used in nurseries to reduce peat consumption. Finally, the carbon and water footprints of extra virgin olive oil will be assessed to improve the overall sustainability of the supply chain and enhance product value and corporate image.
